Happy New Year!

It's the last day of 2007, and I'm still enjoying some relaxing time with my kids. I do plan to take down those outside Christmas lights today, as a cold front is supposed to pull through later. Whatever your plans are for celebrating, have fun & be safe!

I did spend a little time making up a little lounge set with the last of this cute flannel I had, and just listed it on eBay:

You're So Good To ME

I met my husband Chad a little over 15 years ago... we started hanging out together at my parents' house that Christmas... our first kiss was when he took me out for my birthday a month later. It is impossible to fathom how much we've changed since then, and how much our relationship has changed too. But one thing hasn't changed - I love him, he's so fabulous. No, he's not perfect. Neither am I. And yet we're still together, because God Himself kept us together.



Chad, this one's for you -
You're so good to me, baby.
Here's to 15 more years, and then 15 more after that...
You know the part where she says "I wanna lock you up in my closet"?
She must know that's the only place we get to spend 5 minutes having an adult conversation without little kids interrupting...!

Christmas Eve Soup

I made this tonight for our Christmas Eve dinner... it was probably the best homemade soup (or "stoup" = stew & soup) I've ever made! Thanks again to Rachael Ray... although I've edited it a bit to reflect some of what I had on hand, her great recipes come through for me over and over!

Turkey Dumpling and Noodle Stoup

2 cups whole wheat penne pasta (or other short pasta, like rotini)
Start by boiling water in a medium pot, cook the pasta for about 5 minutes, then drain & reserve

Next, in a large pot, swirl
2 Tbsp extra virgin olive oil

Add & saute (stirring occasionally):
3/4 large yellow onion, thinly sliced (other 1/4 onion is used later)
1/4 tsp. red pepper flakes
3 garlic cloves, pressed or minced
1/4 tsp. salt & pepper
one fresh rosemary stem, whole

After about 5 minutes, when the onions have softened, remove the rosemary stem, then add & bring to boil
1 (32 oz.) box chicken stock

In the meantime, in a medium mixing bowl, mix together:
1 lb. ground turkey
1/4 onion, grated with a box grater or food processor
1 tsp. dried oregano
1 tsp. olive oil
1/2 cup shredded Parmesan cheese

Using a small spring-loaded cookie scoop, drop scoopfuls of turkey meatball mixture into the boiling soup (if you don't have a cookie scoop, make meatballs about walnut sized with a spoon & your hands). Once you've made all the meatballs, cover the pot & boil for 5 minutes. Add the noodles, boil for about 2 minutes more.

Add & stir in 2 Tbsp. prepared pesto, then serve into bowls. Top with a bit more shredded Parmesan, and serve with crusty bread or rolls & a salad.

Try Something New!

Handmade gifts for the holidays are quite popular this year, due to toy recalls & tight budgets. I have loved making homemade gifts my whole life, but this gift had a different purpose for me.

I bought a smocking pleater through eBay in August, excited & determined to try something new by learning smocking. Then... I chickened out! It seemed rather daunting to learn pleating, smocking, beading and assembling a smocked garment all at once.

Then I saw this pattern in the current issue of Sew Beautiful Magazine, and knew this was my answer! I could learn on something small, and make an ornament that I needed for an ornament exchange at the same time.

I made a lot of mistakes, learned a lot, and look forward to many more smocked projects now that I have this one under my belt. And I'm tempted to pick my own gift bag at the ornament exchange today!
