Cookies & Milk

Can a cookie be delicious and be good for you at the same time?
These certainly try to be!
Oatmeal
Whole wheat flour
Honey instead of white sugar
Butter instead of shortening
(give me the real stuff - my body knows what to do with that!)

My kids love them, especially if I add the chocolate chips
(haven't you heard, chocolate is good for you, too!!)





Oatmeal Cookies

1 1/2 sticks of butter, room temperature
1 c. firmly packed brown sugar
1/2 c. honey (or granulated sugar if you must)
1 egg
1/4 tsp. vanilla
1/4 c. water
1 c. whole wheat flour
1/2 tsp. baking soda
3 c. uncooked oatmeal (rolled oats or quick cooking oats - either is fine)


In a mixing bowl, beat the 1st 6 ingredients until creamy. Add the dry ingredients, one at a time & in order; blend well. Drop by spoonfuls 2" apart onto cookie sheet sprayed with non-stick spray. Bake at 350° for 12-15 minutes. Allow to cool for a few minutes so they can solidify before you remove them from the tray, or they will fall apart.


For variety, you can add one or more of the following:
1 c. chocolate chips
2/3 c. raisins
1 c. nuts, chopped
1 c. butterscotch chips
1/2 c. coconut
1/2 tsp. cinnamon & 1/4 tsp. nutmeg

i have a soft spot for oatmeal cookies. they're just so...wholesome, y'know? or at least that's what i tell myself. :)
